Shepherd's Pie


1½ lbs. Ground beef round
½ Onion, chopped
1 lb. Frozen or fresh cooked veggies
1½ - 2 lbs. Potatoes
Milk for mashing potatoes
Butter for mashing potatoes
Salt, pepper and other seasonings of choice
Shredded cheese, if desired
 
Preheat oven to 350°
 
Boil the potatoes in salted water until tender.  Mash with milk and butter.  You’ll need enough mashed potatoes to cover the top of the casserole.  Sauté the onions with the ground beef until the beef is no longer pink.  Season the meat with salt, pepper and any others you like.  Remove from heat and place in a small casserole, (1½ - 2 quart).  Spread the vegetables over the meat.  Spread the potatoes over the vegetables.  Some people cover the top with shredded cheese, some turn up the heat a little to brown the top. Bake for about 40 minutes.  Take care to make sure your ground beef is fully cooked, reaching a temperature of at least 160°.
