Blueberry Buckle


You may ask – what is a Buckle? A Buckle is a cake layer with the berries on the bottom and the top layer is made of crumbs. In some areas, the berries are actually the middle layer. This is a perfect quick brunch item in late summer.

You will need:

¾ cup granulated sugar

¼ cup shortening or butter

1 large egg

½ cup whole milk

2 cups all-purpose flour

2 teaspoons baking powder

½ teaspoon salt

2 cups fresh blueberries

 

½ cup granulated sugar

¼ cup all-purpose flour

½ teaspoon ground cinnamon

¼ cup butter, softened

 

Directions:

Preheat your oven to 375 °. Grease an 8x8" pan.

Cream together the ¾ cup sugar, the shortening, and the egg.

In a separate bowl mix together the 2 cups of flour, the baking powder, and the salt. Stir into the sugar mixture, alternating with the milk. Stir in the blueberries and pour into the greased 8x8" pan.

For the Buckle: Combine the ½ cup sugar, ¼ cup flour, the cinnamon and the softened ¼ cup of soft butter with a fork. Sprinkle this over the blueberry mix.

Bake for 25-30 minutes.
